Rationale:

The purpose of the Culinary Arts program is to provide a fun and positive approach to the food experience. The individuals who access this program come with a variety of skill and expectations. Some want to learn about nutrition and how to follow recipes using all of the necessary equipment, while others want to sit and enjoy the ambiance, taking in all of the sights, sounds and tastes.

The program generally operates with 4-6 individuals and 2 staff. A positive hands-on approach is the focus to learning. Individuals can access the program as often as they wish.

 

Course Outline:

The Program varies depending on ability or the desire of the individual. Staff refer to the individuals Person Centered Plan (PCP) to identify and work on individualized goals.

  • Personal cleanliness: This is stressed through out the program.
  • Food storage
  • Utensil usage and storage
  • Nutrition and portion control
  • Research recipes
  • Food preparation; following recipes, measurement
  • Simple math and money handling
  • Kitchen cleanliness

Goals and Outcomes for Each Participant:

  • An enjoyable kitchen experience.
  • Co-operation and social skills
  • Enhancing the senses.
  • Relaxation
